Nothing you have stated sounds wrong. All that matters is peak EGTs with sustained full throttle. Part throttle means nothing. driving around town means nothing. You need to look at sustained full throttle throughout the rpm band. Then adjust fueling to limit or back off the throttle when needed. You can have any temperature you want by adding more fuel... You want the continuous temperatures to stay below 1330 F pre-turbo.
Move the thermocouple to before the turbo. A post turbo reading is completely useless.
FYI, grounding does not matter with a thermocouple. It measures voltage with no reference to ground.
