I have always had success by doing a "mild" seasoning every few months. When there is already some oily residue on it, put it in the oven and get it up to 450 for 30-45 min, use a wash cloth and wipe the inside down a bit, don't burn yourself! Then turn it off and leave it in there until morning, Wipe clean in the am with that same wash cloth.

What do you guys do with your camping cast iron ? I have a Lodge dutch oven with the tri pod feet and lipped lid to hold coals. The heat of the fire tends to burn off anything on the outside and the cast iron usually flash rusts and looks gross by the next morning. I admittedly have just been loading the thing in the sankey and never give it any love untill mos later when we are going camping again.
A favorite use has been spicy lasagne made with whole hog spicy sausage from the local menonnite butcher shop. Lasagne cooks for a pretty good while 45-60mins with coals top and bottom and makes a hell of mess of the dutch oven,but so damn good.

I recently picked up a chainmail style scrubbed off amazon for my cast iron. It does a great job knocking off stubborn crusty bits of food. Regret not getting one a while ago. Bunch of different makes and sizes on amzn.

Doug, I just use Pam veritable spray which seems to do the trick on the outside. I Try to spray while it’s still warm to the touch so it drys better in its own.

Guessing thats the only option, as you have seen after dinner things usually slip to further imbibery.
Cleaning usually goes till the next morning unless a late evening dump cake happens.
