What about making ratatouille with it? Crazy healthy and very good.I made some Halibut the other night along with a quick pasta from stuff we had around (Campari tomatoes and arugula). I’ve never had halibut before, but definitely want to make it again.

Today I was out in the country and stopped at a country store for lunch. An older couple offered me some zucchini and squash, which I don’t really care for, but decided to take some anyway. I remembered an Italian restaurant i like a lot serves a cold zucchini salad, so I am trying to make it myself. I haven’t tasted it yetView attachment 14253

This recipe works great and is super easy for ratatouille. Also great to swap for sea bass is flounder fillets since they’re easier to come by in the appropriate size in the US (I’ve found).What about making ratatouille with it? Crazy healthy and very good.
