What's For Dinner Tonight?

Last nights dinner - Fresh salmon that my son caught in the Rogue River. Enough fish to try a few different recipes. Tonight was grill baked, with brussels sprouts, Mexican corn & herb marinade grilled cheese.

Spicy Zucchini Soup - total 20 min
2 zucchini, 2 yellow squash (any mix of these 2 is fine)
2 large spanish onions
1 shallot
1 jalapeño, chopped up
3-4 large cloves of garlic
Salt/pepper/thyme/sage/turmeric
Olive oil
handful of any type of bacon (pancetta ideal, but speck or even regular bacon is fine)
white wine of any kind
chicken stock (or veggie stock)
Optional - feel free to use this recipe as a way to get rid of a random piece of kale, a leftover leek, broccoli, etc, just don't let it outnumber the squash by volume or the taste will be off)

  • Coat bottom of large pan (I used my dutch oven) with olive oil and toss in the onions/shallot/garlic and a large pinch of salt and pepper
  • fry until the first sign of browning, at this point add the chopped squash and jalapeño, keep moving everything around until it begins to get very aromatic, add the bacon
  • Move everything to a blender or food processor and blend just enough to puree (adding just enough stock to cover)
  • heat the pan/dutch oven back up and deglaze with a splash of wine, try to get all the great brown bits off the sides
  • Move the pureed soup back to that pan and lower heat, add heavy pinches of thyme/sage/turmeric (or even paprika and saffron if you have it)
  • cook for another 5-8 min or until the smell drives you crazy
  • Serve with crusty bread (and a handful of pine nuts or pepitos tossed in if you have them)

I'm staying at my parent's river house right now and they have an electric range, which I consider to be pretty much unusable. I roasted some chicken with lemon, garlic, and butter on the Primo last night.

Pork belly(samgyeopsal), beef bulgogi, marinated wagyu, all the Korean sides they had at the grocery store I could find fresh.
I LOVE Korean food like this, great job.

Right side is Valentina "hot" sauce, paprika, chili powder, garlic, onion, salt and pepper (🇨🇱/ 🇲🇽)

I made some Halibut the other night along with a quick pasta from stuff we had around (Campari tomatoes and arugula). I’ve never had halibut before, but definitely want to make it again.

Today I was out in the country and stopped at a country store for lunch. An older couple offered me some zucchini and squash, which I don’t really care for, but decided to take some anyway. I remembered an Italian restaurant i like a lot serves a cold zucchini salad, so I am trying to make it myself. I haven’t tasted it yet

Here is what the restaurant serves. It’s worth noting that I’ve never had this before, so I really don’t know how it should taste.

What about making ratatouille with it? Crazy healthy and very good.
