First time I've found full size dino ribs(beef spare ribs) locally, so I had to grab them. Took just over 9 hours on the smoker but came out insane, fall off the bone good.

A little celebration of F1 back from Summer break. When finished all the shells, plates, etc gets wrapped up plastic table “cloth” and discarded. Makes for an easier clean up of a pretty messy although awesome meal.

Decided to venture and bake a taco pie, more like an enchilada pie actually. Layered like a lasagna with refried beans, ground beef, sauteed peppers & onions, cheese, salsa, tortillas.. repeat.

Baked at 350 for 20 minutes then 5 minutes broiled to carmlize the top. Finish with a bourbon. This thing will nestle up in your stomach for a week. So good.

Hot days call for cool salads. Puttanesca Chickpea-Tomato salad. Tasty stuff.

Shrimp Oreganata with Fettuccini. Got the recipe from a cookbook written by a guy who runs an Italian store in my parents town. I've made this several times and everybody loves it.

Happy to share the recipe if anybody wants, just reach out (I feel bad just posting it publicly as its from a published book...)
