What's For Dinner Tonight?

While on the COVID stay at home gig why not post up what you made for dinner each night. Pictures are always good, who doesn't like food porn?
Tonight we made chicken in the smoker, grits and salad.
I'll start taking pictures tomorrow.

Local trout lightly floured then fried in cast iron skillet with butter, fresh green beans, and wild rice.

The family put me in charge of dinners since I can’t stand doing dishes. Last night was beef tips, peppers, onions and sweet potatoes. 15mins.

Peanut butter and honey on bread...worked on an Alfa Romeo all afternoon and wasn't overly motivated...plus I am cook, busboy and dishwasher here. Indi the Basenji is only good for begging and laughs.

My three brothers and I are having Sunday lunch delivered to our Mum who lives in a small village. England is under a far stricter lock down.

One local pub was failing a year ago, and featured on one of those TV programs about failing restaurants
They are doing fantastically now and are the only place delivering on Sundays.

We've been doing CSA boxes for produce instead of going to the grocery store which has been great for discovering new dishes to make. I'll be sure to post some up.

A side note... I found this recipe that is a great sauce to make with ingredients we always have in the pantry. We often have pasta a side dish with dinner, and this one is a winner.

I’m back and forth from just getting local take-out, to doing normal dinner stuff. Have to plan ahead a bit more because going to the store is something I only want to do once per week if at all.

Ribs are on the menu this week.
Also, one of the absolute best ways to do chicken thighs is to have them thawed to room temp, soak in equal parts oil and water with whatever seasoning you want for at least half an hour, then put on a hot grill. It just works.
Trying to figure out home made bread! No luck so far after 8 different recipes!
Simple stir-fry with chicken, red and green peppers, onions, broccoli, sugar snap peas, and rice. I cook chicken and veggies separately, don’t allow veggies to get too done, then combine at end and pour in the sauce. Which can be any number of combos of my man Yoshida’s, and soy sauces. Other vegetables to taste. But this is one of those meals that is easy, tasty, and it feels healthy with every bite.

How does everyone like to cook beets? That's the one thing that we always seem to get in the CSA boxes that I have never liked.

I have awesome neighbors. Im recently widowed, all my kids are grown and are out doing their own thing just as we raised them and I recently moved to a remote area of NW Montana (not complaining, Im perfectly happy and content, just painting the picture). One neighbor called last night and told me that they had planned on having me over for Easter dinner but with all this social distancing thing going on they would bring me an Easter Dinner plate instead. This is what they brought. Is nice to be on the receiving end of kindness. Wonderful meal!

My wife made brownies. She never makes brownies. :D And some deviled eggs. Doing a zoom meeting with the kids.

Nothing special for the main course. 'spent the afternoon removing the dead dishwasher and installing a new one, and don't feel like going to a lot of trouble. Still have left-over take out pizza from local place. We'd rather be eating it there; sitting at the bar and talking to the bartenders. :(

I like them roasted with other root vegetables (potatoes, sweet potatoes, carrots, turnips, rutabaga, kohlrabi, parsnips, choose any 3-5) in olive oil, salt/pepper, rosemary and thyme.
I always roast them in a separate dish, then toss, due to them turning all the others purple.
