So are you actually taking orders? What is general price? I assume you might not have a fixed price yet, but maybe an idea of what a 55 gallon drum would be? ;)

ahahah basically Jim is right, 55 gallon drums are like 4 grande for grade b....about 6 for Grade A fancy!

I can slot you in for one of the last gallons if you want, just let me know. Ill take orders and payments as soon as its bottled.

So Snell was wrong, Grade A fancy is premium shit!
Im not keeping up with these dumb new types they are trying to tote. Its dumb because it costs us money. The way you grade syrup is by color and so every few years you buy a new set to grade. They are expensive to buy but to sell grade a, for example, you legally needed to have graded it on a color match certfied grading bottle chart blah blah. Now with new stuff, we have to ONCE again buy all new shit. dumb. In my mind, the Garde A Fancy is still the most expensive, though like many says...Grade B tastes so much better!

Those of you who asked about Grade B..yes! 90+ % of our production is grade B. Sap in the beginning of the season produces Grade A, but after the first week it’s all grade B.
How does the grading work? Does the early sap have a lower sugar content? Or is it more about how much it is cooked down or final temp??

syrup all has the same sugar content, but you are right. It has to do with the sap and the season. early sap usually will make grade A syrup..maybe for a week or two. after that, the sap that is being pulled from deeper in the root system makes the darker color (and flavor). Nature is pretty cool!

so we are doing ok on production. Looking like plenty to fufill the sweet needs of the rover nuts. As I bottle the goodness over the next two weeks or so, I will reach out to you individually and request payment. I want to do it systematically so I dont miss anyone. Sticking with last years price will stay at 16$ a pint shipped. This is the same if you buy 1 pint or 20. stay tuned.
