If I had to guess, they probably have people working in the shop that didn’t work on Defenders before working there. I pulled this off their Instagram. They painted the inner fenders on a NAS D90. To me, that’s like when a body shop paints the rear crossmember body colored.

Let's be real, painting the rear xmember is far worse than painting the inner fenders. They're both incorrect, but the rear xmember is a crime

Unless it black imo

Haha, of course that's the exception since it's correct. I've procrastinated painting mine black, bought all the materials last year. I think we're just referring to painting body color

It looks like the engine bay is rhino lined in the exterior color. That could be a client spec. Those guys have been around a long time selling defenders. I have never heard anything negative about them.

As was said above, they have been around for years without online forums being full of complaints--which is about as good as you will get in this business. (Budgetary concerns aside, I would certainly feel comfortable having them restore a truck for me) As always, you should be sure to have reasonable expectations of what the real world condition and performance of a 25+ year old British vehicle will be (my wife calls my Defender her favorite "tractor").

They are also at a "sweet spot" of (1) familiarity with Land Rovers (despite the above, they have been restoring/refreshing trucks for years, (2) large enough scale for efficiency, and (3) *not* focused on producing blinged-out resto-mods with fancy marketing campaigns (unlike many of the other high-end restorers).
